The team from St Ali’s launched Sensory Lab at David Jones in late 2009, with the idea of introducing coffee drinkers to the concept of individual taste profiling, a wider range of different brewing methods and honing coffee-making skills and taste sensations.

The café itself reads like a mad scientist’s laboratory, with flasks and Bunsen burners and apparently the barista even wears a lab coat. It’s aimed at creating a true coffee experience, and invites you to experiment with your own tastes.
